This is my second attempt at making something with cooked avocado. Complete spur of the moment! Again with nothing in my fridge after the holidays.

This is my second attempt at making something with cooked avocado. Complete spur of the moment! Again with nothing in my fridge after the holidays.
I took what I had:
1 Ripe avocado
6 Cherry tomatoes
1-2 Pita breads
Cream cheese (I used "Rondelé" but it's a French brand so I suggest if you are in the US to use "Philadelphia").
Step 1:
Start by heating your oven and cutting your pita bread in half and delicately parting each half to create a wider opening for your filling. Place your pita in the oven for about 2-3 minutes or until the outside has hardened a bit and the inside is still soft.
Step 2:
Chop your avocado in half and then in half inch wedges. Slice your cherry tomatoes in half.
Place a skillet on the stove and put a few drops of olive oil in your pan. Set it on medium-high heat.
When the olive oil is hot (check with a drop of water), place your avocado wedges and cherry tomatoes in. Salt & pepper to taste.

Step 3:
Pull out your hot pita bread, (Don't burn yourself!) turn off your oven and spread some cream cheese on both side of the pita opening.
Step 4:
Turn off your stove and with thongs or a fork gently place your avocado wedges and tomatoes in your pita sandwhich!

Yummy! I added mozzarella and ruccola. Makes it a bit Italian :)

I had never tried cooking avocado before, it was tasty. How long do you roast them?

Not very long, you just roast them for about 2 minutes on each side. Adding rucola is a nice touch as it also helps counter the creaminess of the avocado! Good choice.
